Sauteed Liver Balls

Sauteed Liver Balls
1 lb beef liver
1 onion
6 soda crackers or whole wheat crackers
1 tsp sea salt
5 drops tabasco sauce or 1/8 tsp cayenne pepper
2 tbsp evaporated milk
2 eggs, lightly beaten
2 tbsp chopped parsley
3 tbsp bacon drippings



Wash the liver and trim off gristle and skin.
Put the liver onion and crackers through the coarse blade of a meat grinder.
Add salt, tabasco or cayenne, the milk and eggs. Mix well.
Form into bite size balls, roll in chopped parsley.
Heat the bacon drippings in a heavy skillet and fry the balls in it until browned on all sides.
