Leek & Vegetable Stew
6 large leeks, washed well and sliced into 1/2 inch slices inc. some green part

2 large potatoes, peeled and thinly sliced
4 carrots. scrubbed and thinly sliced
1/4 head cabbage, shredded
1 1/2 cups water
1/4 tsp kelp
vegetable salt sea salt to taste
3 slices bacon, or 2 inch piece slab bacon, scored


In a large heavy casserole, place the leeks, then potatoes, next the carrots and last a layer of the cabbage.
Pour the water all over.
season with the kelp and salt.
Add the bacon.
Cover tightly and cook very slowly until all vegetables are tender.
About 40 minutes.
