Sweet Potato Salad

2 cups grated raw sweet potato, can be steamed or boiled
2 cups finely chopped green peppers
1 cup finely ground peanuts, pecans, cashews or almonds
2 tbsp mayonnaise
salad greens
1/2 cup diced cucumber



Combine the sweet potato, green peppers and nuts in a bowl.
Stir in the mayonnaise to barely moisten, or to taste.
Spoon onto a bed of salad greens.
Garnish with the cucumber.
