Apricots are loaded with beta-carotene, as their wonderful yellow orange color informs us., the brighter the fruit, the more beta-carotene.
Hence, the ripe fresh fruit should be eaten whenever possible by those suffering from any infection, especially of the respiratory system, or at risk from cancer.
Dried apricots supply iron, but unless they are still bright orange-yellow, their beta-carotene level is considerably lower.
The sulphur dioxide that preserves this color can be washed off in warm water.
