Health Benefits: Potatoes
Potatoes must provide a pretty good nutritional package, since the Irish peasantry thrived on almost nothing else for generations, without any obvious health problems.
Potatoes, even when boiled or baked, supplies fibers, B-complex, useful minerals, and enough vitamin C to keep scurvy at bay even in winter.
Baked potatoes are nutritionally superior, since many if the nutrients, including much valuable potassium, are found in the skin.
Potato peeling tea, which contains high dose of potassium, is recommended in many countries for high blood pressure, reminding us once more how much good nutrition regularly goes down the drain with the cooking water.


Potatoes are good for slimmers, boiled or baked they contain less than 100 calories per 100 g.
Eat them with low fat cottage cheese or quark instead of high calorie butter, add a carrot, and that's a well balanced , very low calorie meal.


Its the juice of raw potatoes, though, that is celebrated in traditional medicine, in the treatment of both stomach ulcers and arthritis.
The treatment is simple, half a small glass of the raw juice, four times day, for a month,
The taste everyone admits is disgusting, and can be disguised bu the addition of honey, carrot or lemon juice.
Or add the juice to soups, once they have cooled a little.
