Puffed Brown Rice
4 cups cooked browned rice
1 quart soy oil or sesame oil Spread the rice and let dry for three days turning occasionally. It should be hard. Heat the oil in a deep cooker to 360ยบ. Place one quarter cup rice at a time in a stainless steel basket or sieve and lower into the hot oil. Fry about 20 seconds or until lightly golden. Drain on paper towel. Serve as cereal or snack.
