3 3/4 cups chicken broth
2 cups raw brown rice, rinsed and drained 2 medium sized onion, chopped 3 carrots, sliced 1 cup whole dried apricots 1 tsp sea salt 1/4 tsp saffron 1/2 cup whole unblanched almonds In a large saucepan, heat the broth to boiling and add the rice, onion, carrots, apricots, salt and saffron. Bring to a boil, cover and simmer gently 45 minutes or until rice is tender. Serve garnished with almonds. |
