Brown Rice With Chicken

4 tbsp oil
1 cup raw brown rice, rinsed and drained
3 cups boiling chicken broth
2 ribs celery, chopped
2 onions, chopped
1 cup diced cooked chicken
1 tbsp dry white wine
1 tbsp finely ground unblanched almonds


Heat 3 tbsp of the oil in a saucepan and add the rice.
Cook rice in oil until all grains are coated.
Add broth, cover and simmer gently until rice is almost tender, about 40 minutes.
Meanwhile, heat remaining oil and saute the celery and onions in it until tender.
Add to rice along with wine and almonds and cook five minutes longer.
