1 tbsp dry active yeast
1 1/2 cup lukewarm water
1 tsp sea salt
1 tbsp raw sugar
4 cups whole wheat flour
1 egg, beaten
coarse salt




Dissolve the yeast in the warm water.
Combine the salt, sugar and three cups of the flour in a bowl.
Stir in the yeast mixture and enough of the remaining flour to make fairly stiff dough.
Turn dough onto a lightly floured board and knead until smooth and satiny.
Divide dough into 48 pieces and roll each one into rope one half inch in diameter and nine inches long.
Place an oiled baking sheet.
Brush with the beaten egg and sprinkle generously with coarse salt.
Bake 12 to 15 minutes or until browned.
