Deli-Nutri Pancakes

1 cup sifted whole wheat flour
1 cup sifted unbleached white flour
1 cup sifted soy flour
1/2 cup brown rice flour
1/2 cup peanut flour
1 cup non-fat dry milk solids
4 tsp baking powder
1 tsp sea salt
4 eggs
2/3 cup safflower oil
2 cups water, approximately
butter, maple syrup or honey




Sift together twice the whole wheat flour, unbleached white flour, soy flour, rice flour, peanut flour, milk solids, baking powder and salt.
Blend the eggs, oil and two cups water in an electric blender, or beat well.
Stir liquid ingredients into dry ingredients until mixture id of heavy cream consistency.
Add extra water if necessary.
Ladle onto a hot, oiled, griddle and cook until browned.
Turn and brown the second side.
Serve with butter, maple syrup or honey.
