Potato Pancakes I

3 large potatoes
1 large onion
3 eggs
sea salt
2 tbsp wheat germ
1 tsp white flour
oil
sour cream



Grate potatoes on flat stainless steel grater.
Grate onion on fine grater and add to potatoes.
Mix with the eggs.
Alternately, the potatoes, onion and eggs may be blended in an electric blender if divided into 3 batches.
Add salt, wheat germ and flour to grated or blended potato mixture.
Set aside while heating oil.
Add enough oil to just cover the bottom of a large, heavy skillet and heat.
Ladle the potato mixture bu the tablespoonful into the hot fat.
Lower heat slightly and fry quickly until browned.
Turn and brown the other side.
Drain on paper towels.
Serve with sour cream.
