Cold Pudding

Cold Pudding
24 oz mixed dried fruits
1 cup raisins
3 tart apples, peeled, cored and quartered
1 1/2 quarts water
1/2 cup raw sugar or brown sugar
1 cinnamon stick
1/4 cup potato starch
3 tbsp cold water
whipped cream




Wash the dried fruits in warm water, drain and place in a bowl with the raisins and apples.
Pour the water over all.
Add sugar and stir well.
Let stand overnight.
Transfer fruit and liquid to a pan, add cinnamon stick and bring to a boil.
Simmer slowly until fruit is tender but not mushy.
Strain off the cooking liquid into a second pan.
Mix the potato starch with the cold water and stir into fruit liquid.
Bring to a boil, stirring until mixture thickens and is clear, about three minutes.
Place the fruit in a serving bowl, pour the hot pudding all over cool and chill.
Serve with whipped cream.
