Wheat & Date Pudding

1/2 cup raw sugar
1/2 cup whole wheat flour
3/4 tsp sea salt
1/2 cup cold water
2 cups boiling water
3/4 cup diced pitted dates
whipped cream




Combine the sugar, flour and salt in the top of a double boiler.
Mix well, then stir in the cold water.
Stir in the boiling water gradually and cook on high heat.
Stir constantly until mixture thickens, 10 minutes.
Add dates, place over simmering water, cover and cook, stirring occasionally 1 1/2 hours.
Cool and chill, served with whipped cream.
