Butterscotch Pudding

Butterscotch Pudding
1/4 cup raw sugar or brown sugar
1/4 cup arrowroot
1/4 tsp sea salt
1 1/2 cup soy milk
3/4 cup honey or molasses
2 egg yolks, lightly beaten
2 tbsp butter





In a saucepan, mix together the sugar, arrowroot and salt.
Gradually blend in the milk.
Stir in the honey or molasses and mix well.
Bring to a boil, stirring until mixture thickens.
Spoon some of hot mixture onto the egg yolks.
Mix well and return to the bulk of the mixture in the saucepan.
Cook, stirring, until mixture thickens.
Do not allow to boil.
Stir in the butter and pour into four individual dessert dishes.
Cool and chill.
