The Elegance Of Maple
2 cups heavy cream, whipped
1/8 tsp sea salt
5 XL sized eggs, lightly beaten
1 1/2 cups hot pure maple syrup






Place the eggs in the top of a double boiler.
Add gradually the hot syrup into the eggs while beating vigorously.
Add the salt and cook the mixture, over hot water, until mixture thickens.
Stir constantly and cool afterwards.
Fold in the cream and spoon in to a parfait goblets, individual souffle dishes or molds.
Freeze, serve frozen, unmold if made in a molder.
