Ice Cream Of Goat's Milk
1/2 cup raw sugar or maple syrup
2 cups peeled pitted, pureed apricots or peaches 3 tbsp white flour 3 eggs 6 cups sweet goat's milk 1 tsp vanilla Place the sugar or syrup, the flour, eggs and 2 cups of the milk in an electric blender and blend until smooth. Pour into a saucepan. Heat, stirring, until mixture thickens then cool. Beat in remaining milk, the vanilla and fruit puree. Place in an electric ice cream maker and follow packet directions. Beat and freeze until firm. Scrape into a container and store in the freezer. Set in fridge 30 minutes or so before serving for best consistency. |
