Pudding Of India
1 quart milk, scalded
1/2 cup raisins
5 tbsp stoneground cornmeal
2 eggs, well beaten
1 tsp salt
1/2 tsp ground ginger
1/2 tsp nutmeg
2 tbsp butter
1 cup unsulphured molasses
ice cream or whipped cream



Preheat oven to 325ยบ.
Pour the milk over the cornmeal in a saucepan and bring to boil.
Stirring constantly, cook over low heat until thick, smooth and cream about 15 minutes.
Pour cornmeal mixture over the eggs.
Add the salt, ginger, nutmeg, raisins, molasses and butter and pour into a greased baking dish.
Bake 1 1/2 hours.
Serve warm with ice cream or whipped cream.
