Rice Pudding Baked Recipe

2 cups brown rice, cooked
1/2 cup honey
1/2 cup raisins
1/2 tsp lemon rind, grated
1 tsp lemon juice
1/2 tsp vanilla
3 eggs
2 1/2 cups milk
1/4 tsp sea salt




Preheat the oven to 325º.
Place the rice, raisins, rind and juice in a buttered 1 1/2 quart baking dish.
Beat together the remaining ingredients and and pour over the rice and raisins.
Stir to mix.
Bake 30 minutes or until pudding is set.
