Ginataang Santol
Ingredients:
400 g. Santol,peeled,seeded and chopped finely 1 tbsp. Coking Oil 2 tbsp. Crushed Garlic 1/2 Cup Sliced Onions 1/2 Cup Fresh Alamang 2 Pieces Shrimp Broth Cube 1 1/2 Cup Coconut Milk 1/2 Cup Coconut Cream 2 Pieces Chili Directions: 1. Soak chopped santol in salted water for at least 30 minutes; drain and squeeze dry. 2. Heat oil and saute garlic and onion until limp. 3. Stir in alamang and shrimp broth cubes. Cook for 1 minute until alamang changes color. 4. Add santol and cook for 5 minutes. 5. Pour coconut milk. Simmer over low heat for 15 minutes or until almost dry. 6. Pour coconut cream and chill; continue cooking until santol is soft. |

Ingredients:
3-4 pcs. Santol 4 cups coconut milk 1 scallion/onion, peeled and sliced 5 cloves garlic, peeled and minced 3 teaspoons salt or 3 teaspoons raw bagoong alamang 3-5 pcs. siling labuyo Directions: Peel santol. Cut in halves, remove the seeds and set aside. Dice pulp. Sprinkle about 1/2 teaspoon salt over the diced santol, mix then pick up handfuls of the diced pulp and squeeze to remove some of the juice. (This is so the dish does not go sour beyond edibility. In a deep pan heat coconut milk, onions and garlic, stirring every now and then to avoid curdling. When the mixture boils, add in santol and salt or alamang. Continue stirring slowly until the mixture boils. Add in siling labuyo and let the mix simmer until the coco milk is thick and reduced, about 15 minutes.
Serve with steamed rice and fried fish
